It appears that when a zone is bypassed, the system armed then subsequently disarmed, the zone is automatically restored. Can this be defeated and is there an auto bypass function available?

Correct. Bypass Zones do not maintain bypassing after a arming and disarming. There is an Auto Bypass option listed in the Area Settings. When this is enabled, the system will automatically bypass any violated zone at the time of arming.
